Cut the stale bread into 1-inch cubes and let it sit out overnight to dry out, or toast them in the oven at 300°F (150°C) for about 15-20 minutes until crisp.

In a large skillet, melt the butter over medium heat. Add the diced onion and celery, sautéing until softened, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.

Combine Ingredients
In a large bowl, combine the dried bread cubes, sautéed vegetables, chopped thyme, chopped sage, shredded confit turkey, salt, and black pepper. Pour the broth over the mixture and stir gently until everything is evenly moist.

Transfer the stuffing mixture to a greased baking dish. Cover with aluminum foil and bake in a preheated oven at 350°F (175°C) for 30 minutes. Remove the foil and bake for an additional 15-20 minutes until the top is golden brown and crispy.
