Cake and Fillings
Method
Preparation
- 1
Bake the Cake
Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- 2
Mix Dry Ingredients
In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- 3
- 4
Add Boiling Water
Gradually stir in the boiling water until the batter is smooth. Divide the batter evenly between the prepared pans.
- 5
Bake
Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Allow to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
- 6
Prepare Mascarpone Mousse
In a large bowl, beat mascarpone cheese and powdered sugar until smooth. In another bowl, whip heavy cream to stiff peaks and fold it into the mascarpone mixture.
- 7
Make Espresso Caramel
In a saucepan, combine brown sugar, espresso, butter, and water. Cook over medium heat until the sugar dissolves and the mixture thickens.
- 8
Assemble the Cake
Place one layer of cake on a serving platter. Spread half of the mascarpone mousse on top, followed by half of the espresso caramel. Place the second layer on top and repeat the process.
- 9
Finish with Ladyfinger Crumble
Crush the ladyfinger cookies and sprinkle them on top of the cake. Serve chilled.
