Prepare the Profiteroles
Preheat the oven to 400°F (200°C). In a saucepan, combine water, butter, and salt. Bring to a boil, then add flour all at once. Stir until it forms a ball. Remove from heat and let cool slightly. Add eggs one at a time, mixing well after each addition. Pipe small mounds onto a baking sheet.

Bake the Profiteroles
Bake for 20-25 minutes or until golden and puffed. Remove from the oven and let cool.

Roast the Apples
In a skillet, melt butter over medium heat. Add diced apples, brown sugar, and cinnamon. Cook until apples are tender and caramelized, about 10 minutes. Set aside.

Make the Ice Cream
In a bowl, whisk together heavy cream, sweetened condensed milk, salted caramel sauce, and vanilla extract. Pour into an ice cream maker and churn according to the manufacturer's instructions. Freeze until firm.

Assemble the Dessert
Cut the cooled profiteroles in half. Fill them with roasted apples and a scoop of salted caramel ice cream. Top with spiced walnuts and drizzle with extra caramel sauce if desired.
