    Prepare the Clams

    In a large pot, add the manilla clams and cover them with water. Soak for about 30 minutes to allow them to purge any sand. Drain and rinse thoroughly.

    Cook the Onions

    In a large saucepan, heat olive oil over medium heat. Add the cipollini onions and sauté until they are soft and translucent, about 5-7 minutes.

    Add Flavors

    Stir in the diced apple and grated ginger, cooking for an additional 2-3 minutes until fragrant.

    Add Coconut Milk and Clams

    Pour in the coconut milk and bring to a gentle simmer. Add the prepared clams, cover the pot, and cook until the clams open, about 5-7 minutes.

    Cook the Halibut

    Season the halibut fillets with salt and black pepper. Carefully place the fillets into the pot, cover, and cook for another 5-6 minutes until the fish is opaque and flakes easily with a fork.

    Finish with Spinach

    Stir in the fresh spinach and cook for another 1-2 minutes until wilted.

    Ladle the broth, clams, and halibut into bowls. Garnish with fresh cilantro and serve immediately.
