Prep the Plantains
Peel the ripe plantains and cut them into 1/2 inch thick slices. You can cut them diagonally or straight, depending on your preference.

Heat the Oil
In a large skillet or frying pan, heat the vegetable oil over medium heat until hot but not smoking.

Fry the Plantains
Carefully place the plantain slices into the hot oil, making sure not to overcrowd the pan. Fry for about 3-4 minutes on each side or until they are golden brown and crispy.

Drain and Season
Once fried, remove the plantains from the oil and place them on a paper towel-lined plate to drain excess oil. Sprinkle with salt while still hot.

Mix the Ingredients
In a medium bowl, combine the dairy-free sour cream, fresh lime juice, lime zest, and chopped cilantro.

Season to Taste
Add salt to the mixture according to your taste preference. Mix well until all the ingredients are fully combined.

For best flavor, let the lime sour cream chill in the refrigerator for at least 15 minutes before serving.
