In a large pot of boiling salted water, add the fresh corn kernels and cook for about 3-5 minutes until tender. Drain and set aside to cool.

While the corn is cooling, dice the green bell pepper and mince the jalapeño. Set aside.

Chop Cilantro
Rinse and chop the cilantro, then set aside.

Combine Ingredients
In a large mixing bowl, combine the cooled corn, diced green bell pepper, minced jalapeño, and chopped cilantro.

Add Cotija and Lime
Fold in the crumbled cotija cheese and drizzle the lime juice over the mixture. Gently stir to combine.

Finish with Chipotle Aioli
Finally, add the chipotle aioli to the mixture and stir well until everything is evenly coated.
