Cooking Pasta

    Boil the Pasta

    In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente, usually about 8-10 minutes.

    Drain and Set Aside

    Once cooked, drain the pasta in a colander and set aside. Reserve a cup of pasta water for later use.

Preparing Vegetables

    Chop the Vegetables

    While the pasta is cooking, wash and chop the bell peppers, zucchini, carrots, and broccoli into bite-sized pieces. Halve the cherry tomatoes.

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Then add the chopped vegetables and sauté for about 5-7 minutes until they are tender but still crisp.

    Add Spinach

    Stir in the spinach and cook until just wilted, about 2 minutes.

Combining Ingredients

    Combine Pasta and Vegetables

    Add the cooked pasta to the skillet with the sautéed vegetables. Toss well to combine.

    Season the Dish

    Add salt and black pepper to taste. If the pasta seems dry, add a bit of the reserved pasta water to loosen it.

    Finish with Cheese

    Sprinkle the grated Parmesan cheese over the pasta and toss until everything is well combined and the cheese is melted.

Serving

    Serve the Dish

    Serve the Pasta Primavera warm, garnished with additional Parmesan cheese if desired.
