Shred the Cheese
Using a grater, shred the Oaxaca cheese and Queso Blanco into a large bowl. Mix them together to combine.

Mix Salsa Fresca
Add lime juice and salt to the diced vegetables. Stir well to combine and set aside to allow the flavors to meld.
Quesadilla Assembly

Assemble the Quesadilla
Heat a non-stick skillet over medium heat. Place one tortilla in the skillet, sprinkle a generous amount of the cheese mixture on one half of the tortilla, and fold the other half over.

Cook the Quesadilla
Cook for about 2-3 minutes on one side until golden brown, then flip and cook for another 2-3 minutes on the other side until the cheese is melted.

Repeat
Remove the quesadilla from the skillet and repeat the process with the remaining tortillas and cheese mixture.
Serving

Serve with Salsa Fresca
Cut the quesadillas into wedges and serve warm with the prepared salsa fresca on the side.
