Preparation of Fries

Cut the Potatoes
Wash and peel the Russet potatoes. Cut them into thin strips (about 1/4 inch thick) to make fries.

Soak the Fries
Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

Dry the Fries
Drain the fries and lay them out on a clean kitchen towel. Pat them dry thoroughly to remove any moisture.

Heat the Oil
In a large heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Carefully add the dried fries to the hot oil in batches. Fry until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.

Season the Fries
While the fries are still hot, sprinkle with salt to taste.
Preparation of Toppings

Prepare Avocado Verde
In a blender or food processor, combine the flesh of the avocado, lime juice, and a pinch of salt. Blend until smooth and creamy.

Make Sriracha Aioli
In a bowl, mix together the mayonnaise and Sriracha sauce until fully combined. Adjust the amount of Sriracha to taste.

Assemble the Loaded Papas Fritas
On a serving platter, layer the crispy fries. Top generously with crumbled Cotija cheese, chopped fresh cilantro, a drizzle of avocado verde, and dollops of Sriracha aioli.
