Cooking Chicken

Prepare the Chicken
Season the chicken breasts with salt, pepper, and any additional spices you like. Heat a skillet over medium-high heat and add a tablespoon of oil.

Cook the Chicken
Once the skillet is hot, add the chicken breasts and cook for about 6-7 minutes on each side, or until cooked through and the internal temperature reaches 165°F (75°C). Remove from heat and let rest before slicing.

Rinse the Rice
Rinse the long-grain rice under cold water until the water runs clear to remove excess starch.

Cook the Rice
In a medium saucepan, combine the rinsed rice, chicken broth, and taco seasoning. Bring to a boil, then reduce heat to low, cover, and let simmer for about 15-20 minutes, or until the rice is tender and all the liquid is absorbed.

Layer the Ingredients
In a serving bowl, start with a base of the cooked Mexican rice, then add a portion of black beans, followed by sliced chicken.

Sprinkle the shredded cheddar cheese on top, followed by sour cream, salsa, chopped cilantro, diced tomatoes, and jalapeños as desired.
