Falafel Preparation

    Soak the Chickpeas

    Place the dried chickpeas in a bowl and cover with water. Allow them to soak for at least 8 hours or overnight.

    Make the Falafel Mixture

    Drain and rinse the soaked chickpeas. In a food processor, combine the chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, baking powder, salt, and black pepper. Pulse until the mixture is coarse but holds together.

    Add Flour

    Transfer the mixture to a bowl and stir in the all-purpose flour until well combined. If the mixture feels too wet, add a bit more flour.

    Chill the Mixture

    Cover the bowl with plastic wrap and refrigerate for at least 1 hour to help the mixture firm up.

    Shape the Falafel

    Once chilled, scoop out portions of the mixture and form them into small balls or patties, about 1.5 inches in diameter.

    Fry the Falafel

    In a deep skillet or frying pan, heat the vegetable oil over medium heat. Carefully place the falafel balls into the hot oil, frying in batches until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

    Mix the Sauce

    In a bowl, whisk together tahini, lemon juice, minced garlic, water, and salt until smooth. Adjust the consistency with more water if necessary, and taste for seasoning.
