Mousse Preparation

Melt the Chocolate
In a heatproof bowl, combine the dark chocolate and unsweetened cocoa powder. Melt over a double boiler or in the microwave in 30-second intervals, stirring until smooth. Set aside to cool slightly.

Whisk the Eggs
In a separate bowl, whisk together the eggs, granulated sugar, vanilla extract, and a pinch of salt until frothy and pale, about 3-5 minutes.

Combine Mixtures
Carefully fold the melted chocolate mixture into the egg mixture until fully combined, being gentle to retain air.

Chill the Mousse
Spoon the mousse mixture into serving dishes or glasses. Cover and refrigerate for at least 2 hours or until set.

Make the Whipped Cream
In a large mixing bowl, combine the heavy whipping cream, powdered sugar, and vanilla extract. Using an electric mixer, beat on medium-high speed until soft peaks form, about 2-3 minutes.

Once the mousse has set, top each serving with a generous dollop of whipped cream. Optionally, garnish with chocolate shavings or fresh berries.
