Preparation of Carne Asada

Roasted Yukon Potatoes

Prepare the Potatoes
Preheat the oven to 400°F (200°C). Dice the Yukon Gold potatoes into small cubes.

Roast the Potatoes
Toss the diced potatoes with olive oil, salt, and pepper. Spread them evenly on a baking sheet and roast for 25-30 minutes, or until golden and crispy, stirring halfway through.

Prepare the Ingredients
Slice the grilled carne asada and chop the onion into thin slices.

Assemble the Burrito
Lay a large flour tortilla on a flat surface. Start layering with roasted Yukon potatoes, sliced carne asada, queso blanco, pickled jalapeños, pico de gallo, and crispy onion. Drizzle chipotle crema on top.

Wrap the Burrito
Fold in the sides of the tortilla and roll it tightly from the bottom up. Repeat with the remaining tortillas and ingredients.

Slice the burrito in half and serve with additional pico de gallo and chipotle crema on the side.
