Preparation of Nut Filling

Chop the Nuts
In a food processor, combine the walnuts and pistachios. Pulse until coarsely chopped. Be careful not to over-process into a paste.

Mix the Filling
In a mixing bowl, combine the chopped nuts, sugar, and ground cinnamon. Set aside.
Assembly

Preheat the Oven
Preheat your oven to 350°F (175°C).

Prepare the Phyllo Dough
Unroll the phyllo dough and cover it with a damp cloth to prevent it from drying out. Melt the unsalted butter in a saucepan.

Add the Nut Filling
Spread a layer of the nut mixture evenly over the phyllo layers. Continue layering phyllo dough, brushing each layer with butter, until you have used half of the dough.

Finish with Phyllo
Top with another layer of nut filling. Finish with the remaining phyllo dough, layering and buttering each sheet, about 8 sheets on top.
Baking

Cut the Baklava
Using a sharp knife, cut the baklava into diamond or square shapes before baking.

Bake
Place the dish in the preheated oven and bake for about 45-50 minutes, or until the baklava is golden brown.
Preparing the Honey Syrup

Add Vanilla
Once boiling, reduce heat and let it simmer for about 10 minutes. Stir in vanilla extract and remove from heat.
Finishing Touch

Pour Syrup over Baklava
Once the baklava is baked, remove it from the oven and immediately pour the hot honey syrup evenly over the top.

Cool and Serve
Allow the baklava to cool completely before serving, about 2 hours.
