Cooking Pasta

    Boil Water

    Fill a large pot with water, add a generous pinch of salt, and bring it to a boil over high heat.

    Cook Spaghetti

    Once the water is boiling, add the spaghetti. Cook according to package instructions until al dente, usually about 8-10 minutes.

    Reserve Pasta Water

    Before draining the spaghetti, reserve about 1 cup of the pasta cooking water. Then, drain the spaghetti and set aside.

Preparing the Sauce

    Cook Pancetta

    In a large skillet, cook the pancetta over medium heat until it becomes crispy, about 4-5 minutes. Remove from heat and set aside.

    Mix Eggs and Cheese

    In a bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined.

Combining Ingredients

    Combine Pasta and Pancetta

    Add the drained spaghetti to the skillet with the pancetta. Toss to combine and coat the spaghetti with the pancetta fat.

    Add Egg Mixture

    Remove the skillet from heat. Quickly pour the egg and cheese mixture over the pasta, tossing rapidly to create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

    Season

    Taste and add salt if necessary. Adjust seasoning according to preference.

Serving

    Plate and Garnish

    Serve the spaghetti carbonara immediately, garnished with chopped parsley and additional grated Parmesan if desired.
