Prepare the Mashed Potatoes

Peel and chop the potatoes into chunks. Boil in salted water until tender, about 15-20 minutes. Drain and return to pot.

Mash the Potatoes

Add butter and heavy cream to the potatoes. Mash until smooth and creamy. Season with salt and pepper to taste. Set aside.

Cook the Vegetables

In a skillet, heat olive oil over medium heat. Add the mixed vegetables and sauté until tender, about 5-7 minutes. Set aside.

Cook the Steak

Season the New York strip steak with salt and pepper. In the same skillet, sear the steak over high heat for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from skillet and let rest.

Prepare the Peppercorn Bourbon Sauce

In the same skillet, add bourbon and scrape the bottom to deglaze. Stir in crushed peppercorns and simmer until reduced by half, about 3-5 minutes. Adjust seasoning if needed.

Serve

On a plate, place a generous scoop of mashed potatoes, add sautéed vegetables on the side, and top the steak with peppercorn bourbon sauce.
