    Preheat and prepare dough

    Place an oven rack in the top third of the oven and preheat to 500°F (260°C) for at least 30 minutes with a pizza stone or heavy baking sheet inside. If using store-bought dough, let it sit at room temperature 20–30 minutes. On a lightly floured surface, stretch or roll the dough to a 12-inch circle (or desired size). Transfer dough to a piece of parchment paper or a lightly oiled pizza peel. Brush the outer 1/2 inch of the crust lightly with 1 tbs olive oil to help browning.

    Make the quick pizza sauce

    In a small bowl, mash or finely mince 1 garlic clove. Combine crushed canned tomatoes (1 cup), tomato paste (2 tsp), garlic, dried oregano (1 tsp), dried basil (1 tsp), salt (1 tsp), black pepper (1/2 tsp), and sugar (1/2 tsp, optional). Stir until smooth and taste; adjust seasoning. The sauce can be used as-is (no cooking required) or simmered in a small saucepan over medium-low heat for 8–10 minutes to concentrate flavors; let cool slightly before using.

    Cook the sausage

    In a skillet over medium heat, add the bulk Italian sausage (8 oz) and cook, breaking up with a spatula, until fully cooked and no longer pink, about 6–8 minutes. Drain excess fat if necessary and set sausage aside on a paper towel-lined plate.

    Prepare mushrooms and tomatoes

    If desired, wipe mushrooms with a damp towel and slice to about 1/4-inch thickness. Halve or dice tomatoes. To prevent watery topping, you can sauté the mushrooms briefly: heat 1 tsp olive oil in the skillet over medium-high heat, add mushrooms, and cook 3–4 minutes until they release moisture and become lightly browned. Remove from heat and let cool slightly.

    Assemble toppings on dough

    Spread an even layer of the sauce over the prepared dough, leaving a 1/2-inch border for the crust (about 3/4 to 1 cup of sauce depending on preference). Sprinkle half of the shredded fresh mozzarella (about 4 oz) evenly over the sauce. Distribute cooked sausage evenly, then add sliced mushrooms, pepperoni slices (60 g), and the halved/diced tomatoes. Top with remaining mozzarella and sprinkle grated Parmesan (2 tbsp) and red pepper flakes (1/2 tsp) if using.

    Bake the pizza

    Carefully transfer the pizza (on parchment or peel) to the preheated pizza stone or baking sheet. Bake at 500°F (260°C) for 8–12 minutes, rotating halfway if needed, until crust is golden and cheese is bubbly and lightly browned.

    Rest and serve

    Remove pizza from oven and slide onto a cutting board. Brush the crust lightly with 1 tsp olive oil and sprinkle coarse salt (1/4 tsp) over the crust if desired. Let rest 2–3 minutes, garnish with fresh basil leaves, slice into 6–8 pieces, and serve hot.
