Warm Spiced Cider Base

Prepare the Spiced Cider

Combine ingredients

In a medium saucepan combine 4 cups apple cider, 1 cup water, 2 tablespoons brown sugar (or 1 tablespoon maple syrup if using), 3 whole cinnamon sticks, 8 whole cloves, 6 allspice berries, 1 inch sliced fresh ginger, and the thinly sliced orange. Stir to dissolve the sugar.

Simmer gently

Bring the mixture to a low simmer over medium heat. Once it reaches a gentle simmer, reduce heat to low and let it steep uncovered for 15–20 minutes. Maintain the temperature so the cider is hot but not boiling (this preserves aromatics and prevents alcohol burn when added later).

Taste and adjust

After steeping taste the cider and adjust sweetness with up to an additional 1 tablespoon brown sugar or maple syrup if desired. Remove from heat and let sit 5 minutes so spices settle.

Strain

Strain the hot cider through a fine-mesh sieve into a heatproof pitcher or pot to remove spices, ginger, and orange slices. Discard solids or reserve a cinnamon stick and an orange slice for each serving garnish.

Add spirits

For the full batch (serves 4), stir in 6 tablespoons dark rum and 4 tablespoons apple brandy or Calvados (if using) into the hot strained cider. If you prefer a non-alcoholic version, omit the spirits and substitute an equal amount of additional apple cider or a splash of non-alcoholic rum alternative.

Warm through

Return the spiked cider to low heat for 2–3 minutes just to warm the spirits through—do not boil. Remove from heat.

Optional smoky finish

If you want a faint smoky note, stir in a very small pinch (about 1/8–1/4 tsp) of freshly ground black pepper or smoked paprika and mix well. Start small and adjust to taste.

Serve

Ladle the hot Fireside Cider into 4 warmed mugs (about 1 cup per mug).

Garnish each mug with a reserved cinnamon stick, a star anise, and an orange peel twist threaded or floated on top.

Serve immediately, with extra maple syrup or brown sugar on the side for guests who prefer it sweeter.
