Method
Optional Wet-Brine (do this 30–60 minutes before cooking if using)
In a bowl or container, dissolve 1 tablespoon kosher salt and 1 teaspoon sugar into 2 cups cold water. Submerge the 10 wings, cover, and refrigerate 30–60 minutes. After brining, drain and pat wings very dry with paper towels.
Prep & Season
Preheat and dry
If not brining, pat the wings dry thoroughly with paper towels. Preheat oven to 425°F (220°C) or preheat an air fryer to 400°F (204°C). Dry wings ensure crisp skin.
Season
Place wings in a large bowl. Sprinkle 1 teaspoon kosher salt, 1 teaspoon black pepper, 1 teaspoon garlic powder, 1 teaspoon paprika and 1 tablespoon baking powder over the wings. Toss well to coat evenly. The baking powder helps the skin crisp in the oven/air fryer.
Cook (Oven Method)
Arrange and bake
Arrange wings in a single layer on a wire rack set over a rimmed baking sheet (this allows air circulation). Bake at 425°F (220°C) for 25 minutes.
Flip and finish
Flip wings with tongs and continue baking another 15–20 minutes until deep golden brown and internal temperature reaches 165°F (74°C) and skin is crisp. Total oven time ~40–45 minutes depending on size.
Cook (Air Fryer Method - alternative)
Place wings in a single layer in the air fryer basket (cook in two batches if needed). Air fry at 400°F (204°C) for 18–22 minutes, shaking the basket or turning wings halfway through, until golden and crisp and internal temp is 165°F (74°C).
Sauce & Finish
Buffalo (simple)
Melt 1 tablespoon unsalted butter in a small saucepan or microwave briefly. Stir in 1 tablespoon buffalo or hot sauce until combined. Place hot wings in a large bowl, pour sauce over and toss to coat evenly.
Honey-Garlic (alternative)
In a small skillet over medium-low heat, combine 1 tablespoon honey, 1 teaspoon soy sauce and 1 teaspoon minced garlic. Warm 1–2 minutes until fragrant and slightly syrupy. Toss wings in the glaze until coated.
Serve
Transfer wings to a serving plate. Sprinkle 1 tablespoon chopped fresh parsley or chives over the wings. Serve immediately with celery sticks and ranch or blue cheese dressing for dipping.
