1. Prepare the Spinach
Wash the fresh spinach thoroughly and then chop it roughly. Steam or sauté it lightly until wilted, about 2-3 minutes.
2. Mix Ingredients
In a large mixing bowl, combine the wilted spinach, chickpea flour, chopped onion, minced garlic, cumin powder, salt, and black pepper. Mix well until all ingredients are combined.
3. Add Water
Add the olive oil and water to the mixture. Stir until you achieve a thick batter-like consistency. If too dry, add a little more water as needed.
4. Form Patties
Shape the mixture into small patties, about 2-3 inches in diameter.
5. Cook the Patties
In a non-stick skillet, heat a little olive oil over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown and crispy.
