1. Prepare the Saltfish
Soak the saltfish in water overnight or for at least 8 hours to remove excess salt. After soaking, rinse and boil the saltfish in fresh water for about 20 minutes or until tender. Drain and flake the fish, removing any bones.
2. Sauté the Vegetables
In a large skillet, heat olive oil over medium heat. Add chopped onion, minced garlic, diced tomato, and diced bell pepper. Sauté for 5-7 minutes until the vegetables are tender.
3. Add Callaloo and Saltfish
Add the callaloo leaves to the skillet along with the flaked saltfish. Stir well to combine. Season with black pepper and thyme. Cook for an additional 10-15 minutes until the callaloo is wilted and tender.
4. Finish and Serve
Stir in chopped scallions and adjust seasoning if needed. Remove from heat and serve hot, either as a main dish or a side.
