    Prepare the Saltfish

    Soak the saltfish in water overnight or for at least 4 hours to remove excess salt. Drain and rinse before cooking.

    Cook the Saltfish

    In a pot, add the soaked saltfish and cover with fresh water. Bring to a boil and simmer for about 15 minutes until tender. Remove from heat, drain, and flake the fish with a fork.

    Prepare the Okra

    Wash the okra and cut them into 1-inch pieces. Set aside.

    In a large skillet, heat the olive oil over medium heat. Add chopped onion, minced garlic, diced tomato, and sliced bell pepper. Sauté until the vegetables are soft, about 5 minutes.
