    Marinate the Goat

    In a large bowl, combine goat meat with curry powder, garlic, ginger, salt, and pepper. Mix well and let it marinate for at least 2 hours, preferably overnight in the fridge.

    Sauté the Aromatics

    In a large pot, heat vegetable oil over medium heat. Add chopped onions and sauté until they are translucent.

    Cook the Goat

    Add the marinated goat meat to the pot and brown on all sides. Stir occasionally to prevent sticking.

    Add Tomatoes and Coconut Milk

    Once the meat is browned, add diced tomatoes and coconut milk to the pot. Stir to combine.

    Simmer

    Add the whole Scotch bonnet pepper and bring the mixture to a simmer. Cover the pot and let it cook on low heat for about 1.5 to 2 hours, or until the goat is tender.

    Finish and Serve

    Remove the Scotch bonnet pepper (if you want less heat) and taste the curry for seasoning, adding more salt and pepper as necessary. Garnish with fresh cilantro before serving.
