    In a large bowl, season the oxtail with salt, black pepper, and allspice. Let it marinate for at least 30 minutes.

    Brown the Oxtail

    Heat vegetable oil in a large pot over medium-high heat. Add the marinated oxtail and sear on all sides until browned.

    Add chopped onions, minced garlic, and thyme to the pot. Sauté until the onions are translucent.

    Pour in the coconut milk and water, then add the red kidney beans. Stir well to combine.
