    Brown the Chicken

    Heat olive oil in a large pot over medium-high heat. Season chicken pieces with salt and black pepper. Add chicken to the pot and brown on all sides, about 5-7 minutes. Remove chicken from the pot and set aside.

    In the same pot, add chopped onion, garlic, bell pepper, carrot, and celery. Sauté until the vegetables are softened, about 5 minutes.

    Add Broth and Seasonings

    Return the browned chicken to the pot. Pour in the chicken broth and add thyme and bay leaf. Bring to a boil.

    Reduce heat to low, cover the pot, and let it simmer for about 30-40 minutes, or until the chicken is cooked through and tender.

    Remove bay leaf before serving. Serve the stewed chicken hot, with your choice of sides.
