    Prepare the Ingredients

    Chop the onion, bell pepper, garlic, and ginger. Dice the tomatoes and slice the carrot.

    Sear the Salmon

    In a large skillet, heat the olive oil over medium heat. Season the salmon fillets with salt and black pepper. Add the salmon to the skillet and sear for about 3–4 minutes on each side until golden brown. Remove and set aside.

    In the same skillet, add the chopped onion, bell pepper, garlic, and ginger. Sauté for about 5 minutes until the vegetables are softened.

    Stir in the diced tomatoes, sliced carrot, thyme, bay leaf, vegetable broth, and soy sauce. Simmer for about 10 minutes until the carrots are tender.
