Method
Prepare and combine dry ingredients

Preheat oven and prep pan
Preheat the oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease the cups.

In a large bowl, whisk together 1 cup wheat bran, 1 cup all-purpose flour, 3 tablespoons rolled oats, 2 teaspoons baking powder, 1/2 teaspoon baking soda, 1/2 teaspoon ground cinnamon, and 1/4 teaspoon salt until evenly distributed.

Stir in 1/2 cup packed brown sugar and 1/4 cup granulated sugar until combined with the dry mixture.
Prepare wet mixture

In a separate medium bowl, whisk together 1 cup buttermilk, 2 large eggs, 1/3 cup melted and cooled unsalted butter (or oil), 1 teaspoon vanilla extract, and 1 tablespoon maple syrup or honey (if using) until smooth.
Combine wet and dry

Make a well in the center of the dry ingredients and pour in the wet mixture. Using a spatula, fold gently just until the flour is mostly incorporated. Do not overmix; a few streaks of flour are fine. Batter should be slightly thick but spoonable.

If batter seems very thick, add up to 1–2 tablespoons more milk or buttermilk to reach a scoopable consistency.
Add berries and finish batter

Gently fold in 1 cup fresh or frozen mixed berries and 1 teaspoon lemon zest (if using). If using frozen berries, fold them in straight from frozen to minimize color bleed and avoid thawing.

Divide the batter evenly among the 12 prepared muffin cups, filling each about 3/4 full. Sprinkle the tops with coarse sugar if desired for crunch.
Bake and cool

Bake at 375°F (190°C) for 18–22 minutes, rotating the pan once halfway through baking, until the tops are golden and a toothpick inserted into the center of a muffin comes out with a few moist crumbs but not wet batter.

Store cooled muffins in an airtight container at room temperature for up to 2 days or refrigerate up to 5 days. Freeze leftover muffins for up to 3 months.
