Green Goddess Spread

    Combine herbs and base

    In a small bowl, combine 1/2 cup plain Greek yogurt and 2 tablespoons mayonnaise until smooth.

    Add herbs and flavorings

    Stir in 1/4 cup packed parsley, 1 tablespoon chopped chives, and 1 tablespoon tarragon or basil (if using). Add 1 teaspoon lemon juice, 1/2 teaspoon minced garlic, 1 teaspoon olive oil, 1/4 teaspoon salt and 1/8 teaspoon black pepper.

    Adjust texture and chill

    Mix thoroughly. If you prefer a thinner spread, add up to 1 teaspoon water or more lemon juice. Taste and adjust salt/pepper. Cover and refrigerate for at least 10 minutes to let flavors meld (can make up to 24 hours ahead).

Sandwich

    Cook bacon

    If bacon is not cooked, cook 6 slices of bacon in a skillet over medium heat until crisp, about 8–10 minutes, turning as needed. Drain on paper towels. (Alternatively use pre-cooked bacon.)

    Toast bread

    Lightly toast 4 slices of whole grain bread until golden but still slightly soft, about 2–3 minutes in a toaster or under a broiler.

    Prepare smashed avocado

    Halve and pit 1.5 ripe avocados. Scoop the flesh into a bowl and add 1 tablespoon lemon juice, 1/2 teaspoon kosher salt and 1/4 teaspoon freshly ground black pepper. Use a fork to smash to a chunky but spreadable consistency.

    Assemble sandwiches

    Spread about 2 tablespoons of the Green Goddess spread evenly on one side of each toasted bread slice (reserve a little for the top if you like). On two slices (bottoms), spread half of the smashed avocado (about 2–3 tablespoons each).

    Layer fillings

    Top the avocado on each sandwich bottom with 4 slices of smoked turkey, 3 cooked bacon strips (arrange to cover), a few slices of tomato if using, and about 1/2 cup total baby spinach or mixed greens divided between the two sandwiches.

    Finish and serve

    Spread remaining Green Goddess on the top bread slices, place them over the fillings, press gently, and cut each sandwich in half. Serve immediately. If preparing for later, wrap sandwiches tightly to keep them from drying; add bacon and greens just before serving for best texture.
