Pumpkin Spice Syrup

Combine sugars and spices
In a small saucepan combine 2 tablespoons granulated sugar and 2 tablespoons water over medium heat. Stir until the sugar dissolves and the mixture begins to simmer.

Add pumpkin and spices
Whisk in 2 teaspoons pumpkin purée, 1 teaspoon packed brown sugar, 1 teaspoon ground cinnamon, 1 teaspoon ground ginger and 1/4 teaspoon ground nutmeg. Continue to simmer gently for 1 minute, stirring constantly so the pumpkin fully incorporates.

Finish syrup
Remove from heat and whisk in 1/2 teaspoon vanilla extract. Let the syrup cool for at least 5 minutes. Taste and adjust sweetness or spice balance if desired. The syrup yields about 3 tablespoons; you will use about 2 tablespoons for one latte and can refrigerate the remainder in a sealed jar for up to 5 days.

Pull espresso
Dose 18 g of freshly ground espresso into the portafilter, tamp evenly and firmly. Pull a double shot (approximately 36 ml) directly into your serving cup while you steam the milk so espresso stays hot and crema is fresh.

Prepare milk
Combine 1 cup whole milk and 2 tablespoons heavy cream (optional) in a stainless-steel steaming pitcher. Purge the steam wand briefly, then submerge the tip just below the milk surface and steam to create silky microfoam. Target temperature is 60–65°C (140–149°F). If you don't have a steam wand, heat the milk until warm (not boiling) and froth vigorously with a handheld frother.

Sweeten espresso
Add about 2 tablespoons of the prepared pumpkin spice syrup to the espresso in the cup. Stir gently to combine so the syrup evenly flavors the espresso.

Garnish and serve
Top with 2 tablespoons whipped cream if using. Lightly dust with 1/4 teaspoon ground cinnamon and 1/8 teaspoon ground nutmeg. Serve immediately.
