Brew Tea

    Boil and steep

    Bring 1.5 liters of water to a rolling boil. Remove from heat and add 4 rooibos tea bags. Cover and steep for 8–10 minutes for a robust, flavorful brew (rooibos is forgiving; up to 12 minutes if you want stronger flavor).

    Sweeten while hot

    Remove the tea bags, gently pressing them against the side of the pot to extract flavor. While the tea is still warm (but not boiling), stir in 3 tablespoons honey or agave until fully dissolved. This helps the sweetener blend evenly into the cold drink later.

    Cool to room temperature

    Let the sweetened rooibos cool uncovered to room temperature (about 20–30 minutes) or place the pot in an ice bath to speed cooling. Once cooled, transfer to a pitcher.

Prepare Fruit & Herbs

    Slice citrus and macerate berries

    Thinly slice the orange and the half lemon into rounds or half-moons. In a small bowl, lightly crush the strawberries and raspberries with the back of a spoon to release juices (about 30 seconds).

    Muddle mint

    Tear the mint leaves from the stems and gently muddle them with your fingers or a muddler for 5–8 seconds to release oils — avoid over-muddling to prevent bitterness.

    Add the sliced citrus, crushed berries, and muddled mint to the pitcher with the cooled rooibos tea. Stir gently to combine and allow the fruit to infuse for at least 30 minutes in the refrigerator; for stronger fruit flavor, refrigerate 2–4 hours or overnight.

Assemble & Serve

    Strain and adjust

    After infusion, taste the tea. If you want it sweeter, stir in up to 1 additional tablespoon of honey or agave (optional). Strain the tea into a clean pitcher to remove fruit solids and mint if you prefer a clear tea; alternatively leave the fruit in for a rustic presentation.

    Chill and add ice

    Fill a serving pitcher or individual glasses with ice cubes (about 3 cups total for the batch). Pour the chilled rooibos-fruit tea over the ice.

    Optional sparkling finish

    If using sparkling water, gently stir in 500 ml cold sparkling water just before serving to preserve fizz. Otherwise serve still.

    Garnish and serve

    Garnish each glass with a slice of orange or lemon and a sprig of mint. Serve immediately over ice.
