Honey Lemon Mixture

Zest and Juice
Zest one medium lemon to yield about 1 tablespoon of zest. Halve enough lemons and squeeze until you have 3/4 cup (0.75 cup) fresh lemon juice. Strain the juice through a fine mesh sieve to remove pulp and seeds if you prefer a smoother drink.

Dissolve Honey
Place 1/2 cup wildflower honey and 1/4 cup warm (not boiling) water in a small bowl or measuring cup. Stir until the honey is fully dissolved into a thin syrup (about 30–60 seconds). Warm water helps dissolve honey quickly without cooking the honey.

Combine Mixture
In a pitcher, combine the strained lemon juice, lemon zest (1 tablespoon), and the honey syrup. Stir vigorously for 15–20 seconds to incorporate. Taste and adjust sweetness: add up to 1–2 tablespoons more honey syrup if you prefer sweeter; or a splash more water if too intense.
Assemble & Serve

Prepare Glasses
Divide ice cubes between two tall serving glasses (about 1/2 cup ice per glass). Place 2 lemon slices and 4 mint leaves into each glass, gently bruising the mint between fingers before adding to release aroma.

Add Mixture and Sparkling Water
Pour half of the honey-lemon mixture (about 1/2 cup) into each prepared glass. Top each with 1 cup cold sparkling water. Stir gently once to combine, being careful to preserve fizz.

Garnish and Finish
Grate an additional 1 teaspoon lemon zest over the top (split between the two glasses) and float an extra lemon slice and a mint sprig on each for aroma and presentation. Serve immediately.
