Heat water
Heat 12 oz (350 ml) of fresh filtered water to 75–80°C (167–176°F). If you don't have a thermometer, bring water to a near simmer and let it cool 2–3 minutes before pouring — you want it noticeably below boiling to avoid bitter extraction.

Bloom briefly (optional)
Pour a small splash (about 1–2 tbsp) of the heated water over the tea leaves and jasmine blossoms and immediately discard this rinse. This quick rinse wakes the leaves and removes any dust, helping deliver a cleaner, brighter cup.
Steeping

Steep properly
Pour the remaining heated water over the tea and jasmine blossoms. Cover and steep for 2 to 2.5 minutes. For a lighter cup, steep 1.5–2 minutes; for a fuller flavor without bitterness, do not exceed 3 minutes.

Separate leaves
After steeping, strain the tea into cups or remove the infuser. Leaving the leaves in the water will continue to extract and can introduce bitterness and astringency.

Multiple infusions
These high-quality full leaves and jasmine blossoms can be re-steeped 2–3 more times. For subsequent infusions, increase steep time by 30–45 seconds each time and use water at the same temperature.

Store leftover dry tea and jasmine blossoms in an airtight container away from light and strong odors to preserve floral aroma for future brews.
