Vanilla Berry Compote

Combine ingredients
In a small saucepan, add 2 cups frozen mixed berries, 3 tbs sugar, 2 tbs water, and 1 tbs fresh lemon juice.

Cook
Place saucepan over medium heat. Bring mixture to a gentle simmer, stirring occasionally. As the berries thaw and release juice (about 4–6 minutes), use the back of a spoon to lightly mash larger berries to create a saucy consistency.

Thicken and finish
Reduce heat to low and simmer another 2–3 minutes until slightly thickened. Stir in 1 tsp vanilla extract. Taste and add up to 1–2 tbs more sugar if you prefer sweeter compote. Remove from heat and let cool to room temperature (about 15–20 minutes) — compote will thicken more as it cools.

Optional chill
For chilled parfaits, transfer compote to a jar and refrigerate until cold (about 30 minutes). If you prefer a warm parfait, use compote warm but not piping hot.
Yogurt & Assembly

Sweeten yogurt
In a medium bowl, stir 3 cups plain Greek yogurt with 2 tbs honey and 1 tsp vanilla extract until smooth and slightly glossy. Taste and adjust honey as desired.

Prepare serving glasses
Select 4 serving glasses or bowls (about 8 oz each). Spoon about 2 tbs granola into the bottom of each glass to create a crunchy base.

Layer parfaits
Divide the sweetened Greek yogurt evenly among the glasses (about 3/4 cup per glass). Spoon 2–3 tbs of the vanilla berry compote over the yogurt layer in each glass. Add another 2 tbs granola on top of the compote for contrast, then add a final dollop (about 2–3 tbs) of yogurt and a spoonful of compote for a pretty finish.

Garnish and serve
Top each parfait with fresh berries (about 2–3 strawberries or a small handful of blueberries/raspberries) and a sprinkle of remaining granola. Garnish with mint leaves if using. Serve immediately if you want the granola crunchy, or cover and refrigerate up to 4 hours (granola will soften if stored).

Storage
Store leftover compote in an airtight container in the refrigerator for up to 7 days. Assembled parfaits are best eaten within 4 hours for maximum granola crunch; if storing longer, keep granola separate and add just before serving.
