Method
Scrambled eggs & mix-ins

Prep eggs
Crack the eggs into a medium bowl. Whisk together with the milk, salt and black pepper until blended and slightly frothy.

Heat a large nonstick skillet over medium heat and add 1 tablespoon olive oil. When shimmering, add the chopped red onion and diced red bell pepper. Sauté for 3–4 minutes until softened.

In a separate medium skillet over medium heat, combine the cooked brown rice (or quinoa), black beans and corn. Stir in the ground cumin and smoked paprika. Cook, stirring occasionally, until heated through, about 3–4 minutes. Season with a pinch of salt and pepper to taste.

If rice is cold and clumpy, add 1–2 tablespoons of water and cover briefly to steam and loosen before mixing with beans.
Assemble burritos

Lay one warm wrap flat. Spoon about 1/4 cup of the rice-and-bean mixture down the center of each wrap. Top with 1/6 of the scrambled eggs and veggies (roughly 1/3 cup), sprinkle 1/4 cup shredded cheddar, and add about 2 tablespoons salsa. Add a teaspoon of chopped cilantro and a squeeze of lime juice to each.

Fold the sides of the wrap in, then roll tightly from the bottom to form a burrito. Repeat for remaining wraps.
Finish & serve

Heat a large skillet over medium-low heat and add 1 tablespoon butter or olive oil. Place burritos seam-side down and cook 1–2 minutes until golden and sealed. Flip and toast the other side 1–2 minutes more. This step helps melt the cheese and crisp the exterior.

Slice each burrito in half if desired. Serve warm with extra salsa, lime wedges, chopped cilantro and hot sauce on the side.
