Method
Brew the Tea

Heat water
Bring 12 oz (≈355 ml) of fresh water to a near-boil, about 200°F (93°C). If you don't have a thermometer, bring water to a full boil and let sit 30 seconds.

Steep
Place 2 tsp loose Earl Grey tea (or 2 high-quality tea bags) into a teapot or heatproof vessel. Pour the hot water over the tea and steep for 3 to 4 minutes for a balanced strength. Steep 4 minutes for a stronger flavor, but avoid over-steeping to prevent bitterness.

Strain
Remove tea leaves or bags and pour the brewed tea into a heatproof cup or pitcher. If you want an extra concentrated flavor for the large latte, use the full 4-minute steep time.
Prepare Milk

Warm milk
Pour 10 oz of whole milk into a small saucepan or milk pitcher. Heat the milk over medium-low heat until it reaches 150–160°F (65–71°C) — small bubbles will form around the edge but it should not boil. If you don't have a thermometer, heat until it's very warm and just starting to steam.

Froth
Froth the milk using one of the following methods: a) Steam wand: steam to create microfoam until velvety and about 1.25x original volume. b) Hand frother/handheld electric frother: froth vigorously until foamy and slightly thickened. c) French press: pump 15–20 times quickly to aerate. d) Jar method: shake vigorously in a sealed jar, then microwave 20–30 seconds to stabilize foam. Aim for a smooth, dense foam with small bubbles.
Assemble the Latte

Combine tea and sweetener
Pour the brewed Earl Grey tea into a large latte cup (approximate total capacity ~20 oz). If you like stronger bergamot flavor, add up to 1/2 tsp bergamot oil or a small amount (a few thin strips) of finely grated fresh bergamot zest and stir gently to incorporate. Taste and adjust sweetness, adding more vanilla syrup or honey if desired.

Lightly dust the foam with a pinch (about 1/4 tsp) of ground cinnamon if desired. Serve immediately.
