Cold Brew Base

    Steep coffee

    Combine 1 cup coarsely ground coffee and 4 cups cold filtered water in a large jar or pitcher. Stir to fully saturate grounds. Cover and refrigerate or leave at room temperature for 12 to 18 hours for full cold-brew extraction (12 hours for a milder brew, up to 18 for stronger).

    Strain

    After steeping, strain coffee through a fine-mesh sieve lined with a coffee filter, cheesecloth, or a nut-milk bag into a clean container. Press or squeeze gently to extract liquid but avoid forcing fines through.

    Sweet corn note

    While still cold, stir into the strained cold brew: 2 tablespoons sweetened condensed milk, 1 teaspoon light corn syrup (or corn milk concentrate), and 1/2 teaspoon vanilla extract. Taste and adjust: add up to 2 tablespoons whole milk if the brew is too strong or the sweetness needs balancing.

    Chill

    Return the sweetened cold brew to the fridge if it warmed while mixing. Keep chilled until assembly.

Vanilla Sweet Cream Topping

    Make sweet cream

    In a small bowl, combine 3 oz heavy cream, 2 oz half-and-half, 1/4 teaspoon vanilla extract, and 1 teaspoon confectioners' sugar. Whisk briskly for 20–30 seconds until slightly thickened but still pourable (soft peak is not required). Alternatively, for a silkier texture, shake ingredients in a jar for 30–40 seconds or use a handheld frother for 10–15 seconds.

    Taste & adjust

    Taste the sweet cream and add a pinch more confectioners' sugar if you prefer sweeter, or a drop more vanilla if you'd like stronger vanilla notes.

Assembly & Garnish

    Fill a tall glass with about 1 cup ice cubes.

    Pour 6–8 ounces (¾ to 1 cup) of the sweetened cold brew over the ice, leaving room for the sweet cream on top.

    Slowly float 2–3 tablespoons of the vanilla sweet cream over the cold brew by pouring it over the back of a spoon so it layers on top.

    Garnish immediately with 6–8 candy corn pieces on top of the sweet cream. For visual appeal, reserve a couple of whole pieces to place upright at the edge of the glass.

    Serve with a straw and small spoon so the drinker can stir the sweet cream into the coffee as desired.
