    Prepare and combine greens

    Rinse the baby spinach and kale thoroughly under cold running water to remove grit. Shake off excess water and spin dry in a salad spinner or pat dry with clean kitchen towels. Remove tough kale stems and stack the leaves, roll them tightly and slice thinly to yield about 2 cups packed. Place the spinach and sliced kale in a large mixing bowl and gently toss to combine.

    Make dressing

    In a small bowl or jar, whisk together the extra-virgin olive oil, fresh lemon juice, minced garlic, sea salt, black pepper, and optional red pepper flakes until emulsified and slightly thickened.

    Dress the greens

    Pour the dressing evenly over the spinach and kale. Using clean hands or salad tongs, massage the dressing into the leaves for 30–60 seconds — pressing and rubbing the kale gently will soften it and help the flavors penetrate. Continue until the kale is slightly wilted and the spinach is glossy.

    Taste and adjust

    Taste a bite and adjust seasoning as needed: add more salt, lemon juice for brightness, or a drizzle more olive oil to mellow. Serve immediately as a simple dressed greens side, or use as the leafy base for bowls, sandwiches, or warm dishes.
