Preserved Citrus Preparation

    Prepare the Citrus

    Wash the lemons, limes, and oranges thoroughly under cold water to remove any dirt or wax. Pat them dry with a clean towel.

    Cut the Citrus

    Cut each lemon, lime, and orange into quarters, being careful to keep the skin intact. Remove any seeds you may encounter.

    Layer the Citrus with Salt and Sugar

    In a large mixing bowl, layer the citrus quarters with sea salt and granulated sugar. Alternate layers of citrus, salt, and sugar until all ingredients are used up. Let the mixture sit for about 30 minutes to allow the juices to start extracting.

    Prepare the Brine

    In a pot, combine the water, black peppercorns, coriander seeds, and bay leaves. Bring to a boil over medium heat, then reduce the heat and simmer for 5 minutes to infuse the flavors.

    Combine and Preserve

    Once the brine has cooled slightly, pour it over the citrus mixture in the bowl. Ensure that all pieces are submerged in the liquid. Transfer the entire mixture into sterilized jars, packing it tightly.

    Seal and Store

    Seal the jars tightly and let them cool to room temperature. Store in the refrigerator for at least 1 week before using to allow the flavors to develop. The preserved citrus can be stored in the refrigerator for up to 6 months.
