Brussels Sprouts

Miso Aioli

Pickled Jalapeño

Method

Preparing Pickled Jalapeño

  1. 1

    Make the Pickling Brine

In a saucepan over medium heat, combine the white vinegar, sugar, salt, and water. Stir until the sugar and salt are completely dissolved.

  2. 2

    Slice the Jalapeños

While the brine is heating, slice the jalapeño peppers into thin rings.

  3. 3

    Pickle the Jalapeños

Once the brine is ready, add the sliced jalapeños to the saucepan. Remove from heat and let them sit in the brine until cooled, then transfer to a jar and refrigerate.

Making Miso Aioli

  1. 4

    Combine Ingredients

In a small bowl, whisk together the mayonnaise, miso paste, minced garlic clove, and lemon juice until smooth.

  2. 5

    Season

Taste the aioli and add salt as needed. Set aside or refrigerate until ready to serve.

Frying Brussels Sprouts

  1. 6

    Prepare the Brussels Sprouts

Trim the stems of the Brussels sprouts and remove any yellow leaves. Cut them in half lengthwise.

  2. 7

    Season the Brussels Sprouts

In a large bowl, toss the halved Brussels sprouts with olive oil, salt, and black pepper until evenly coated.

  3. 8

    Fry the Brussels Sprouts

In a large skillet over medium-high heat, add the seasoned Brussels sprouts cut-side down. Fry for about 5-7 minutes until they are golden brown and crispy. Flip and cook for another 3-5 minutes until tender.

  4. 9

    Drain and Serve

Remove the Brussels sprouts from the skillet and drain on paper towels. Serve warm with miso aioli and pickled jalapeños.
