Prepare the Duck

Score the skin of the duck breasts in a crosshatch pattern, making sure not to cut into the meat. Season with salt and black pepper on both sides.

Sear the Duck

In a large skillet, heat olive oil over medium-high heat. Place the duck breasts skin-side down in the skillet. Cook for about 6-8 minutes until the skin is crispy and golden brown. Flip and cook for an additional 4-5 minutes. Remove from skillet and let rest.

Make the Sauce

In the same skillet, add minced garlic and thyme, sautéing until fragrant. Pour in the white wine and scrape up any browned bits. Allow to reduce by half.

Add Stock and Butter

Add chicken stock to the skillet and let it simmer for about 5 minutes. Stir in the butter until melted and the sauce is glossy.

Prepare the Asparagus

While the sauce is simmering, trim the asparagus and blanch them in boiling water for 2-3 minutes until tender-crisp. Drain and set aside.
