Infuse the cream
In a medium saucepan, combine the heavy cream, milk, and dried candy cap mushrooms. Heat over medium-low heat until just simmering. Remove from heat and let it steep for 30 minutes to allow the flavors to infuse.
Whisk the egg yolks
In a mixing bowl, whisk together the egg yolks and sugar until the mixture is pale and slightly thickened. This will help create a smooth custard.
Combine mixtures
After the cream has steeped, strain the mixture through a fine-mesh sieve to remove the mushrooms. Gradually whisk the warm cream into the egg yolk mixture until fully combined. Add in the vanilla extract.
Bake
Bake the custards in the preheated oven for about 30-35 minutes, or until they are set but still slightly wobbly in the center. Remove the ramekins from the water bath and let them cool to room temperature.
Chill
Once cooled, cover each ramekin with plastic wrap and refrigerate for at least 2 hours or overnight for best results.
