Crostini Preparation

Prepare the Sourdough

Preheat the oven to 375°F (190°C). Slice the sourdough bread into 1/2 inch thick slices. Brush each slice with olive oil and sprinkle with salt. Arrange the slices on a baking sheet.

Bake the Crostini

Bake in the preheated oven for about 10-12 minutes or until golden brown and crisp. Remove from the oven and let cool.

Tomato Agrodolce Preparation

Cook the Tomatoes

In a medium saucepan, heat 2 tablespoons of olive oil over medium heat. Add diced red onion and sauté until translucent, about 5 minutes. Add cherry tomatoes, sugar, vinegar, salt, and pepper. Cook until tomatoes are soft and the mixture is slightly thickened, about 10-15 minutes. Allow to cool slightly.

Assembly

Assemble the Crostini

Top each crostini with a spoonful of the tomato agrodolce, a piece of anchovy, and a few basil leaves. Serve immediately.
