1. Prepare the batter
In a large mixing bowl, combine the ricotta cheese, flour, grated Parmesan cheese, eggs, salt, and black pepper. Mix until well combined and a thick batter forms.
2. Heat the oil
In a large skillet, heat the olive oil over medium heat until shimmering.
3. Fry the frittelle
Using a spoon, drop heaping tablespoons of the batter into the hot oil. Fry for about 3-4 minutes on each side, or until golden brown. Remove from the skillet and drain on paper towels.
