Preparing the Tempura Batter

Make the Batter

In a bowl, combine all-purpose flour, cornstarch, salt, black pepper, and squid ink. Gradually whisk in cold water until the batter is smooth and slightly thick.

Frying the Calamari

Heat the Oil

In a deep frying pan or pot, heat the oil over medium-high heat until it reaches 180°C (350°F).

Coat the Calamari

Dip the squid rings into the batter, ensuring they are fully coated.

Fry the Calamari

Carefully place the battered squid rings into the hot oil in batches. Fry for about 2-3 minutes or until golden brown and crispy.

Drain and Serve

Remove the fried calamari from the oil and drain on a paper towel. Serve hot, garnished with capers, cherry peppers, and lemon wedges.
