Preparation
Prepare the Squash
Preheat the oven to 400°F (200°C). Cut the delicata squash in half lengthwise, scoop out the seeds, and slice into half-moons about 1/2 inch thick.
Season the Squash
In a large bowl, toss the squash slices with olive oil, garlic powder, salt, and black pepper until evenly coated.
Roast the Squash
Spread the seasoned squash on a baking sheet in a single layer and roast for 20-25 minutes until tender and slightly caramelized, flipping halfway through.
Assembly
Prepare the Topping
In a separate bowl, mix breadcrumbs, Parmesan cheese, olive oil, salt, and pepper until well combined.
Top and Bake
Remove the squash from the oven and sprinkle the breadcrumb mixture evenly over the top. Return to the oven and bake for an additional 10-15 minutes until golden and crispy.
Serving
Serve
Once golden and crispy, remove from the oven and let cool slightly before serving. Enjoy your Caesar of The Season!
