Prepare the Vegetables
Preheat your oven to 400°F (200°C). In a large bowl, combine the sliced fennel, halved cherry tomatoes, minced garlic, olive oil, salt, and black pepper. Toss everything together until the vegetables are well-coated.

Arrange the Salmon
Place the salmon fillets on a baking sheet lined with parchment paper. Squeeze the lemon juice over the fillets and season with salt and pepper. Sprinkle the fresh oregano on top of the salmon.

Add Vegetables
Spread the prepared fennel and tomato mixture around the salmon on the baking sheet.

Bake
Bake in the preheated oven for about 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork. The vegetables should be tender and slightly caramelized.

Serve
Remove from the oven and let it rest for a few minutes. Serve the salmon oreganata with the roasted vegetables on the side.
