    Heat the Dairy

    In a large saucepan, combine the whole milk and heavy cream. Heat over medium heat until the mixture is just about to boil, stirring occasionally to prevent sticking.

    Curd Formation

    Once the milk mixture reaches a simmer, remove it from the heat. Add the white vinegar and sea salt, stirring gently. Let it sit for about 10 minutes to allow the curds to form.

    Strain the Curds

    Line a fine mesh strainer with cheesecloth and place it over a bowl. Carefully pour the curds and whey into the strainer, allowing the whey to drain for about 15-20 minutes, or until the ricotta reaches your desired consistency.

    Finish and Serve

    Transfer the ricotta to a bowl, taste and adjust the seasoning if necessary. Serve with a drizzle of honey and a sprinkle of fresh mint and sea salt.
