Cooking Directions

  1. 1

    Prepare the Salsa Verde

In a bowl, combine the fresh parsley, capers, minced garlic, lemon juice, and 3 tablespoons of olive oil. Mix well and season with salt to taste. Set aside.

  2. 2

    Prepare the Branzino

Preheat the grill to medium-high heat. Clean the Branzino and make sure it is scaled and gutted. Pat dry with paper towels.

  3. 3

    Season the Fish

Brush the Branzino with 1 tablespoon of olive oil, then season with salt and black pepper, both inside and out.

  4. 4

    Grill the Branzino

Place the Branzino on the grill and cook for about 6-8 minutes on each side, or until the flesh is opaque and flakes easily with a fork.

  5. 5

    Prepare the Cherry Tomatoes

While the fish is grilling, cut the cherry tomatoes in half and drizzle with a little olive oil, salt, and pepper.

  6. 6

    Serve

Once the Branzino is cooked, carefully remove it from the grill. Serve it with the salsa verde drizzled on top and the cherry tomatoes on the side. Squeeze fresh lemon juice over the dish before serving.
