Prepare the Calamari
In a large bowl, combine the flour, cornstarch, salt, black pepper, and cayenne pepper. Mix well to create the dry dredging mixture.

Dredge the Calamari
Take the cleaned calamari rings and toss them in the flour mixture until fully coated. Shake off any excess flour.

Heat the Oil
In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping in a small piece of the calamari; it should sizzle.

Fry the Calamari
Fry the calamari in batches, being careful not to overcrowd the pan. Cook for 2-3 minutes or until golden brown, turning occasionally. Use a slotted spoon to remove the calamari and drain on paper towels.

Serve
Arrange the fried calamari on a serving plate. Sprinkle with pepperoncino flakes and serve hot with marinara sauce and lemon wedges on the side.
