Preparation

    Prepare the Nut Filling

    In a mixing bowl, combine chopped walnuts, chopped pistachios, sugar, and ground cinnamon. Stir until well mixed and set aside.

    Prepare the Phyllo Dough

    Thaw the phyllo dough according to package instructions. Preheat the oven to 350°F (175°C).

Assembling Baklava

    Layering the Phyllo

    Brush a 9x13 inch baking dish with melted butter. Lay one sheet of phyllo dough in the dish and brush with butter. Repeat this process for about 8 sheets.

    Adding the Nut Filling

    Spread a layer of the nut filling evenly over the phyllo. Then layer 4 more sheets of phyllo, brushing each one with butter. Repeat this process, alternating between nut filling and phyllo sheets, until the nut filling is used up.

    Final Layer

    Top with 8 more sheets of phyllo dough, brushing each with butter. Use a sharp knife to cut the baklava into diamond shapes.

Baking

    Bake the Baklava

    Bake in the preheated oven for about 45 minutes or until golden brown.

Making the Honey Syrup

    Prepare the Syrup

    In a saucepan, combine sugar, water, honey, and vanilla extract. Bring to a boil and then reduce to a simmer for about 10 minutes.

Finishing Touches

    Drizzle the Syrup

    Once the baklava is baked, remove it from the oven and immediately pour the hot syrup over it. Allow it to soak and cool for at least 4 hours before serving.
